Grilled Pickle Relish
2 packs of Midamar jumbo beef franks
4 dill pickles, sliced lengthwise
2 tbsp canola oil
1 cup finely chopped white onion
salt to taste
½ cup distilled white vinegar
2 tbsp sugar
2 tbsp mustard
2 tbsp finely chopped parsley
1) Fry onion in oil until softened, add vinegar, sugar, and mustard and stir to combine. Simmer until thickened, remove from heat, and set aside
2) Place pickle spears on heated grill and cook for about 2 minutes per side, or until charred. Remove from grill and let cool. Place jumbo beef franks on grill and cook until lightly charred and golden brown, about 2-3 minutes per side
3) Once cooled, chop pickles into bite sized pieces and mix into onion mixture. Place jumbo franks onto buns and serve with grilled pickle relish and desired toppings
