It Friday, and it’s been a cold rainy one here in Iowa, so I thought, “The weather can be dreary but that doesn’t mean I can’t enjoy pizza rolls!” As a Kid I used to get the cheese pizza rolls from the store but times have changed, I’m a older, my tastes have become more complex, also I like our pepperoni so I’d like to have that… Not to mention, now that I’ve started working more intimately with the family business I am learning about ingredients and things I’ve found that not all things from my youth are made with things I want to eat. Which, in a way, is tragic. Though, it is tragic in a hopeful way! Now I can stretch my imagination and find slightly healthier ways to make things I used to love.
Given, it will always be easier to throw caution to the wind and buy the pre-made stuff, I find a sense of pride in being able to, not only make these copy-cat recipes, but also to share them with you. Plus, making it at home always tastes better. The important thing I’ve learned from this cooking series I’ve done is the concept of modification. So long as you can learn the absolute basics of a recipe you can reformulate it to fit your tastes or curiosities. It’s made cooking a much more fun and fulfilling experience for me personally. For example, in this recipe we’ll make 4 different pizza rolls, or pockets, whichever word makes you happier. We’re making a pepperoni, a sausage, a Mediterranean, and a double meat but, that only scratches the surface of the possibilities! These could be BBQ chicken pizza, taco pizza, beef and mushroom, or you could even go away from pizza if you want to. I’m excited to try making a kind of butter chicken pocket or taco pocket, the possibilities are truly endless. And if you end up finding one you don’t like? Well, it’s always better try something and not like it then to have never had tried at all.

Ingredients:
Midamar Halal Seasoned Beef Topping
Midamar’s Halal Beef and Lamb Gyro Strips, cut into bite sized pizzas
1 Al Saffy Artichoke, cut into bite sized pieces
Freshly shredded mozzarella (bagged is fine but may not melt as well)
Pizza sauce
1 – 2 tubes of crescents rolls
Italian seasoning
Olive oil
Instructions:
1) Pop open the tube and separate crescents into 4 squares on a large cutting board, pinch the perforated edge closed. This is optional but, it does add extra structural integrity.
2) On one half of the square place about 1 Tbsp of pizza sauce and 1 Tbsp mozzarella. Add toppings as desired. I made 1 pepperoni, 1 beef topping, 1 gyro and artichoke, and 1 pepperoni and beef topping. Top with ~1 Tbsp more mozzarella. Sprinkle Italian seasoning over filling.
3) Wrap the opposite side of crescent roll around the filling, using a fork, crimp the edges of the crescent closed. Brush tops with olive oil and place on a cookie sheet.
4) Bake at 375° for 20-25 minutes or until tops are golden brown.
