Hot and Tasty Lasagna Soup

Let’s talk lasagna, first and foremost it’s delicious, it’s filling, and you can make a pan of it and have dinner taken care of for the week with the leftovers. But it’s not without its drawbacks, namely that it’s a time investment laying out and layering your pasta and waiting for it to bake, all the while you’re getting more and more hungry. So, what are you supposed to do after a long day that’s left you with a craving for lasagna but you need it in a fraction of the time? This lasagna soup is the answer you’ve been searching for! A hot pot of all the amazing lasagna flavors, coming together just in time for soup season.

Wasting no time and diving right in, like most soups, if you have one big pot then you’re ready to get cooking, and this recipe requires mercifully little preparation. The only thing you’ll need to prepare separately from the rest is your pasta, boil some broken up lasagna noodles in water until they’re nearly done but still a little firm, that way they can finish cooking with everything else when they’re added to the pot later. But this is a recipe all about getting tasty lasagna and being time efficient, so you can get your pasta boiling with you start on the soup and knock out both steps at the same time.

Getting into the meat of the recipe, pun intended, we used Halal 93% lean ground beef from Midamar, taking the opportunity to make this recipe just a little bit healthier. The fat in beef cooks down into more flavor, but this recipe isn’t lacking in the flavor department, so a lean beef works great and does a body good. Speaking of flavor, a simple blend of a few herbs and spices adds that deliciously fresh complexity that make a good recipe great. If you have a favorite Italian seasoning, that’s great to toss in, otherwise we made ours ourselves with a few things that you’d expect like parsley, oregano, and thyme.

After everything is assembled and the broth and crushed tomato is added in, your lasagna soup should be looking decidedly soupy, and like all good soups it’s just a matter of letting it all simmer together and letting the flavors all come together. As tempting as it is to dive into this now, it’d make a pretty delicious tomato soup at this stage, toss in the noodles to finish cooking just a little bit and, believe it or not, you’re all set.

Like a lot of soups, this is done before you know it, and it’s incredibly time and effort efficient. This soup is delicious and is everything we love about lasagna, and now you have a ton of it for you, the whole family, and some more for leftovers! What more could you want?
