Smothered Chicken Burritos by Cooking with Cass!

Queso. It’s one of the wonders of the world. It’s majestic as it flows down chips and burritos alike. But the queso in this recipe is nice and thick to make burrito night home extra special. And unlike what you can get at Mexican restaurant this one has homemade refried beans, which means you know it’s all Halal!

Ingredients for the chicken:

1 lb Halal Chicken Breast, cut into bite sized pieces (available on our site!)

2 cloves of Garlic, minced

1 tbsp lime juice

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

1 tsp salt

½ tsp oregano

¼ tsp black pepper

Ingredients for the Queso Dip:

2 cups of freshly grated Monterey jack cheese

½ yellow onion

3 cloves garlic, minced

3 chipotles in adobo sauce

1 tbsp adobo sauce

2 roma tomatoes

8 oz cream cheese

2/3 cup of milk (I used whole milk but any should work)

1 tbsp canola oil

Ingredients for the refried beans:

1 can of black beans, rinsed and drained

½ yellow onion

2 garlic cloves, minced

½ tsp cumin

½ tsp salt

¼ tsp black pepper

½ cup water

1 Tbsp canola oil

Ingredients for the burrito:

Large tortillas

Cooked white rice

Shredded lettuce

Guacamole

Instructions:

1) Combine all ingredients for the chicken and let marinate in the fridge for 30 mins to 3 hours

2) QUESO: Bake roma tomatoes at 400° for 15-20 minutes. Fry onions in pan, once translucent add garlic, cook until fragrant. Remove pan from heat, add onions and garlic to food processor with tomatoes, peppers, and sauce. Process until smooth. In a clean pan add cream cheese in a portion of the milk, constantly stir until the two combine. Add cheese and fold, adding milk as needed. Once cheese is melted add chipotle paste and stir until combine. Remove and keep warm

3) REFRIED BEANS: Roughly chop onion and add to a pan over medium heat. Add 1 tbsp canola oil and cook until translucent. Add garlic and cook until slightly the onions are slightly caramelized. Add beans, spices, and water then stir to combine. Bring to simmer and let cook for about 3 minutes, heat until little water is left. Add bean mixture to a food processor and process until smooth. Remove beans from processor and place in pan, cook until slightly thickened, about 5 – 10 minutes depending on desired thickness

4) Cook chicken over medium high heat until no pink remains.

5) On a large cutting board or plate, place down a tortilla and spread beans being sure to spread the beans close to the edge of one side of the tortilla. Next layer rice, lettuce, guacamole, chicken, and a thin layer of queso. Wrap the burrito on the edge without the beans, the goal here  is to use the beans as a glue to hold the whole burrito together. Once wrapped, set the burrito on a large plate and cover with more queso!
