Who doesn’t love a good pasta dish? And who doesn’t love pasta in a delicious spinach and artichoke dip sauce, served with seasoned Halal chicken breast cooked to perfection? I’m sure there’s someone out there who doesn’t love that, but if that sounds like something you’re into then you’ve come to the right place.
This is a simple enough recipe that gives you plenty of great flavor in return, and when actually cooking it, you won’t need much more than a single pan to assemble everything in which is great. The preparation’s a breeze too, we used a savory Fisherman’s Blend seasoning for our chicken with a little paprika and this gave a great blend of herbs and spices that paired great with the creamier flavors of the pasta later on, and a little bit of this seasoning goes a long way so if you use something similar, you won’t want to over-season and make it overpowering. Other than the chicken, the only preparation required is dicing a can of artichoke hearts into small pieces, then everything is ready to get cooking!
Again, this recipe was great because you’re only adding and removing things from the same pan throughout, so you save on dishes later and all your flavors get to cook together and make everything that much more flavorful in the end. After cooking the chicken and removing it from the pan, the cream sauce is made right after, and any chicken juices and drippings left over really enrich the flavor as it all cooks together. And speaking of the sauce, it’s a simple mix of cream cheese as milk slowly whisked in until smooth, then shredded parmesan slowly added in batches until melted and the sauce gets a bit thicker; and that’s all you need for a very tasty cream sauce that really ties everything in this dish together. Then the addition of the artichoke and some cooked spinach gives you that spinach and artichoke dip flavor that was so enticing at the start and it really pays off in this sauce. It’s simple to make but isn’t lacking in flavor and comes with a smooth and creamy texture. For the pasta, we mixed in cooked rotini until everything was evenly coated in sauce; pasta with a little texture like rotini is nice as it helps to hold the sauce and pieces of spinach and artichoke found throughout, so no bite is lacking in the flavor you just spent the time to create.
