In the mood for Halal chicken, beef bacon, and a creamy sauce all in a deliciously crispy package? As strange as it sounds, this week we’re taking a flavor trip to Costco with a fan favorite Costco chicken bake made at home! Whether you’re fueling up for a shopping spree or just in need of a hot and tasty recipe, read on because this could be just what you need.
If you aren’t familiar with the chicken bake, it’s a food court favorite with a filling of tasty flavors like chicken, cheese, and Halal beef bacon all wrapped in a crispy and cheesy breading and makes a tasty and convenient treat. This simplicity makes it the perfect recipe to try for yourself at home, it’s hot and ready fast, and doesn’t require a yearly membership to enjoy.
Starting with the filling, it’s a simple mix of Halal chicken and beef bacon, cream cheese, green onion, and a blend of mozzarella and parmesan that all comes together for a creamy and savory flavor extravaganza. We used Midamar’s new Halal diced chicken, which was perfect for a recipe like this. It’s pre-cooked and diced into bite size pieces and comes unseasoned so you’re free to flavor it however you want. Normally we’d chop some raw chicken breast and cook that to use in this recipe, but with this we can remove that step entirely and cut the prep-time for this recipe in half which is wildly convenient.
In keeping with the theme of simplicity, we used a store-bought pizza crust dough so we could get this recipe moving even faster and these worked great. Two 6.5-ounce packages give you plenty of dough for 3 large bakes and was perfect for serving a slice for everyone in the office. These were not the smaller, more portable versions of the Costco classic, these were some big bakes for big appetites. If you want to make them smaller, more akin to what you’d find in the food court then this much dough can easily give you 6 smaller chicken bakes. When it’s rolled out onto a floured work surface, a simple spread of savory Caesar dressing and a few handfuls of the filling is all you need. Roll in the bottom and sides of the dough, top with Caesar and more shredded cheese, and you’re ready to bake!
